Tonight, i made capellini. I was pleased with the sauce i made.

Ingredients:

1 750g box of Pomi Chopped Tomatoes (about 2 cups non-salted chopped tomatoes)
1 Lg onion
8 Cloves garlic
6 Tbs Fresh oregano
1/8 Cup salt
0.25 C Dry parsley
0.5 C Olive oil
1 C Corn kernels, frozen
1.5 C Chopped spinach, frozen
1 C Water
1.5 C Cabernet Sauvignon
1 C of the pasta water
4 Tbs Butter or oil, i used butter

While the nicely salted water for the pasta trundles toward its boil, medium chop the onion, and coarsley chop the garlic, and toss them into the oil in a large frying pan over medium heat, with half the salt.

Once that's cooked down some, add the herbs and cook a bit longer. The water should be about halfway to boil, at which point add the tomataoes, water, and wine, allow to warm, toss in the corn and spinach, sprinkle in the rest of the salt, leave to simmer, stirring occasionally.

When pasta is added to water, and returned to a boil, add the butter or oil. When pasta is done, stir it into the sauce, with 1 C of the pasta water.

The sauce would have been better with a finish of Sherry Vinaigre, i don't care for Balsamic, though it would work too. Fresh pepper and/or a spot of hard cheese would be nice to taste on a serving, too.
